Great Recipes on Instagram: "COCONUT CHICKEN BAKE

Ingredients:
- 4 chicken thighs or breasts 
- season in plenty of salt, 1 tbsp of oregano, and 1 tsp of smoked paprika
Sauce ingredients;
- 270mls (or closest equivalent) of coconut cream
- 1 cup of vegetable/chicken stock
- 1 tbsp of tomato paste
- 1/2 an onion
- 3 cloves of garlic
- a thumb sized piece of ginger 
- salt to taste
Other ingredients;
- fresh herb of your choosing: I used coriander
- More coconut cream or unflavoured yoghurt

Directions;
- Preheat your pan with avocado oil then brown your seasoned chicken thighs
- Once browned, remove the chicken, and add the onion, garlic, ginger, and veggie stock to deglaze the pan

1.5kg chicken pieces of your choice 
4 large potatoes sliced or quartered
2 tablespoons of your favourite poultry seasoning OR:
- 1 tablespoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon dry oregano
1 whole head of garlic (approx. 10-12 cloves)
Juice of 3 large juicy lemons or ½ a cup
1/2 cup olive oil
1/2 cup water
1 teaspoon salt
 
Combine chicken & potatoes in a large baking dish with the spices, a drizzle of olive oil & salt to taste.
 
Bake uncovered at 200c for 30 minutes.
 
While the chicken is in the oven, make the dressing.
