Turkey, Parmesan & Herb Sweet Potato Burgers! 2 cups pre-cooked mashed sweet potato 500g | 1bs ground lean turkey mince 1 red onion, finely diced 1 tablespoon garlic seasoning (or fresh minced garlic) 1/3 cup freshly grated Parmesan cheese 1 egg 1/4 cup liquid egg whites 1 tablespoon EACH finely chopped FRESH parsley, oregano and basil leaves Salt to season 1 tablespoon vegetable stock powder Cooking oil spray for pan frying
Chimichurri: In a food processor mix: ✔️1 cup cilantro ✔️1 cup parsley ✔️2 tbsp balsamic vinegar ✔️2 tbsp lemon juice ✔️1 tbsp lime juice ✔️salt and pepper to taste ✔️2 tbsp spicy mustard ✔️1 tbsp Sriracha ✔️2 garlic cloves Sauce recipe makes about 5 servings. Serve chicken on top of 1 cup couscous with 2 tbsp black beans and chimichurri sauce.
