Here’s how to make it (serves 2)
 • 2 slices of bread (I used a seed health bread)
 • 1/2 can chickpeas (drained and rinsed)
 • 1/4 cup halved cherry tomatoes
 • 1/4 cup diced cucumber
 • 2 spring onions, chopped
 • handful of cilantro
 • 1 small avocado, cubed 

Dressing:
 • a big handful of cilantro 
 • 1 thumb of ginger, grated
 • 1 garlic clove
 • 1/2 can of coconut cream
 • juice of 1/2 lime 
 • pinch of salt and black pepper 

In a bowl, add chickpeas and using the back of a fork mash your chickpeas slightly. Leave some chickpeas unmashed for extra texture. Next add cucumber, tomato, spring onion and avocado. Add all your dressing ingredients to a blender and blend until smooth. Pour that over your chickpea mixture and stir through. Place your mixture on a piece of fresh bread and
