Hue was once Vietnam’s capital and the seat of the Nguyen Dynasty from 1802 to 1945. Rich in history and monuments, the city itself is a work in progress with little choice of restaurants and hotels. While I didn’t fall in love with the city, I was impressed by the sights it had to offer. As the former home to the last emperor of Vietnam, there are plenty worth seeing.
Vietnamese Beef Stew – Bò Kho
Bò Kho is a traditional Vietnamese beef stew. It's comfort food. Probably every Viet kitchen has its own version. This version is a combination of the basics. It's not as thick as an American stew, but more hearty than a soup with beef, carrots, and traditional Viet flavors like bay leaf, ginger, and anise. Sop up the rich broth with a French baguette like the Vietnamese do or serve with rice.
