INGREDIENTS: 1 bunch of Malabar spinach (Alugbati) 1/8 kg pork, sliced 3 cloves garlic, minced 1 medium onion, sliced 2 pc tomatoes, sliced 1/4 cup soy sauce salt to taste a dash of seasoning 2 tbsp cooking oil PROCEDURE: 1. Heat cooking oil in a pan. 2. Saute pork until brown, set aside. 3. Saute garlic until golden brown. 4. Add in onion, then the tomatoes. 5. Mix the pork. 6. I love alugbati! It's my favorite leafy vegetable though not as popular as kamote or kangkong tops for outside outside the region. It is known as malabar nightshade/spinach with a distinguishable red stem. It is usually paired with squash and meat/seafood for a simple yet delicious dish.
